As a kid I looked forward to St. Patrick’s Day solely for the McDonald’s mint shamrock shakes. I’m a fan all things mint—mojitos, thin mints, this pie…
The problem was…shamrock shakes aren’t sold at every McDonald’s. So it was essentially a month long scavenger hunt. With no clues. 🤷♀️
people are lazy there’s an app for everything, this year there’s a McDonald’s Shamrock Shake Finder. Kids these days…they don’t understand the struggle of the shamrock shake search.
So instead of going to McDonald’s, I created a pie version of the beloved shamrock shake. Which basically means it’s a mint pie.
With a mint Oreo crust. Because mint Oreos are the best Oreos.
And the best part is this pie could not be easier to make. Add ice cream, some whipped cream, throw a few sprinkles on top, and call it a day!
St. Patrick’s Day Mint Ice Cream Pie
20 mint Oreo cookies
3 tbsp butter, melted
1 quart mint chocolate chip ice cream, softened
2 cups heavy whipping cream
1/2 cup sugar
1/2 tsp vanilla
Make the crust: In a food processor, crush Oreo cookies. Add butter and process until combined. Press crumbled cookies into your pie plan. Freeze for 10 minutes.
Prepare the pie: Spread the softened ice cream into bottom of the frozen crust. Freeze for at least 2-3 hours or until firm. Remove pie from freezer 10 minutes before ready to serve.
Make the whipped cream: In a medium mixing bowl, beat whipping cream at high speed. Gradually add sugar and vanilla. Beat until stiff peaks form. Top the pie with whipped cream and add green sprinkles.
